- 1 lb. cooked, peeled & de-veined Shrimp
- 2 cups cooked and chilled Cavatelli Pasta
- 1 cup Chopped Celery
- 1 cup Chopped Zucchini
- 1 cup Chopped Snow Peas
- 1 cup Sliced Green Onion
- 1 cup Sliced Ripe Olives
- 1 cup White Vinegar
- 1/3 cup Olive Oil
- 2 tbsp. Key Lime Juice
- 2 tbsp. Grated Parmesan Cheese
- 1 cup Chopped Fresh Basil
Combine all ingredients except cheese and basil; chill for at least 1 hour. Add cheese and chopped basil.
Serve with fresh, sliced tomatoes. Makes 4 servings.
