  • 1 lb. Fresh Fish Fillets, cut into 1″ Cubes
  • 1 cup Sliced Onions
  • 1 cup Julienne Carrots
  • 1 Large Green Pepper, cut into thin strips
  • 2 tbsp. Oil
  • 2 Large Tomatoes, Peeled and Cut into Wedges
  • 1 tsp. Salt
  • 1 tsp. Basil or Dill
  • 1 tsp. Pepper


Saute onions, carrots & green pepper in olive oil over medium heat for 5 minutes. Add fish and remaining ingredients, stirring well. Cover, reduce heat, and simmer for 10 minutes or until fish flakes easily & center is no longer translucent.


Recipe yields 6 servings.
